Celebrating National Catfish Month

Simmons Catfish has been featured at several events celebrating "National Catfish Month".  Here are recaps of these delicious events.



Little Savannah

August 14 - Little Savannah, Birmingham, Alabama

Little Savannah is a charming restaurant owned by Cliff and Maureen Holt that has quickly become one of my favorite spots.  I met Maureen with friends several months back and she invited Simmons Catfish to participate in their "Farm Table Series" this summer.  Here is the menu which was served family style to a long table of strangers who soon became friends over locally grown food (we had some Yazooans mixed in the crowd of course!


Summer Delights Salad - Cucumbers, Heirlooms, Local Lettuces, Marinated Onions, Fresh Herbs, Champagne Vinaigrette


Blackened Delacata Catfish with Court Bouillon


"Southern" Banana Pudding


The first course was perfect for mid July and a great way to start the meal.  For the Delacata, the Chef blackened the fish in a cast iron skillet then finished in the oven.  I am unsure of exactly what the mixture of seasoning was for the fish but it was just the right amount of spiciness which went perfectly with the court bouillon.  Not your normal court bouillon but the cajun definition which is almost like a paella without all the fuss.  What a great experience!


 

August 19 - Sophia's at The Fairview Inn, Jackson, MS


One of the first of several Eat Jackson events to celebrate "National Catfish Month" was held at Sophia's at The Fairview Inn in Belhaven.  Chef Gary Hawkins of Sophia's and Chef Karl Gorline of Bravo! spearheaded the night with help from Ryan Bell and Johnny Gunbarrel.  This group of chefs are amazingly talented and the below menu reflected this.


Chicken Fried Deviled Eggs


Smoked Catfish Taco - Jicama Citrus Slaw / Spicy Mango / Avocado / Corn Tortilla / Lime


Caviar and Blini - Catfish Blini / Finger Lime / Pea Espuma


Jerked Catfish - Curried Creamed Corn / Roasted Poblano / Okra / Heirloom Tomato


Boulliabaise - Catfish Crudo Roll / White Soy Consommé / Amaranth / Basil / Lemon


Grilled Catfish - Chickpea Puree / Parsley / Cherry Tomatoes / Olives / Fried Capers / Preserved Lemon / Tzatziki


Delta Cardamom Rice Pudding and “Cat”suobushi - Yellow Queen Corn Ice Cream / Shaved Catfish / Macaroon


It would be incredibly hard to pick a favorite course from this menu but everything was inventive and super tasty!

August 30 - Delacata Launch, McDade's Market at Maywood Mart, Jackson MS
